Nantucket Eats: Pork Belly, Duck, and Lamb at Oran Mor Bistro

The wedding is over, the guests have all left the island. Angela and I remain, enjoying the warm breezes blowing on Nantucket from the Atlantic (the temperature reached 69 Fahrenheit yesterday). Abundant sun, cool evenings, walks on cobblestone streets. The season is over, many shops are in the process of closing, and quiet calmness is everywhere.

We have devoted a portion of our evenings to restaurants, with mixed results. Several nights ago we went to Oran Mor Bistro & Bar, a small place on the second floor of a building a short walk from the house in which we are staying. I’d read a review of Oran Mar in The New York Times, and a few people who had dined there told me they had enjoyed the food. (I phoned the restaurant during the day to ask about its corkage policy. A woman’s voice on the other end of the line replied: “We do not have a corkage fee because we have a wine list. I hope you will be able to find something you like on our extensive list.”)

We did find something on the list, a 2012 Laetitia Estate Pinot Noir, which we ordered after being led past a small bar to our table in the corner of restaurant’s front dining room. The interior space is warm, earth tones on the wall, low ceiling. (I could imagine Thomas Jefferson sitting at the table next to us, wine glass at the ready.)

Our waitress, whose voice I recognized as belonging to the woman who informed me of Oran Mor’s (non)-corkage policy on the phone earlier that day, displayed a perfunctory manner throughout the evening, smiling in what seemed a forced manner whenever she approached our table and declining to reply “You are welcome” when I thanked her for pouring the wine. All of which would have been fine if we had ended the meal after our very good first courses.

The smoked pork belly was some of the best I have had, at least since moving to Houston in 2013. The meat was cooked well, and retained a moistness that is often lacking in pork belly. The fatty parts were excellent, as well: they melted in my mouth with a pleasing flavor. The broth was a touch too sweet for me, but the radishes were crisp and a welcome addition to the plate. The ravioli was easily the best thing of the evening. Fresh, strong-tasting mushrooms, rich parmesan broth, and delicate fennel. The pasta was thin yet firm, and each flavor component of the dish melded agreeably.

We were in no hurry on that evening – unless it is absolutely necessary I firmly believe that one should never rush while dining – and several times had to tell a server that, no, we were not finished “working on” our plates. Oran Mor is not an inexpensive place – our bill before tip was $182 – and the service should better represent the niche the restaurant occupies.

While we waited for our main courses we talked about the wedding and the weather on Nantucket and the utilitarian beauty of the Cape Cod architectural style. Our experience at Oran Mor soon took an unfortunate turn.

I ordered the Pekin duck – breast and confit, sweet potato purée, Brussels sprouts, huckleberry compote – and Angela decided on the lamb. (She was attracted to the Kalamata olives and tomatoes, but, we later discovered, there was perhaps all of one olive in the dish, minced.) Again, if our meal had ended after the first course we would have been incredibly happy. Instead, I was served hard potatoes, bland Brussels sprouts, and dry confit. Yes, dry confit. Angela’s lamb was satisfactory, medium-rare, lacking salt. And those olives were nowhere to be found. I must state that my duck breast was good, but it was not enough to salvage the overall lack of attention to technique and flavor.

Dessert was Elvis’ Doughnuts, and if they had all been at least warm, we would have loved them. Banana cream, chocolate, and fried dough, but two of the doughnuts were warm.

Oran Mor is attractive, and, judging by our ravioli and pork belly, can put out good food. I will reserve a final verdict until after my next visit.

Amazing! The Best! Oh My God! (A Reality Check for Houston Diners)

Every day I am treated to another tweet or Facebook post proclaiming that the latest restaurant to open here in Houston is the “best in the city” or “to die for”. (I know no one who has been to each and every restaurant in Houston, so I am confident that anyone proclaiming “best” as applied to a restaurant is at best engaging in hyperbole, and at worst being naive.)

In the past month or so alone I have read at least 40 brief or not-so-brief accolades about Pax Americana and Museum Park Cafe, and while I understand that it is natural to wish nothing but success to restaurant teams opening new places, I often wonder if such glowing reviews about service and dishes/menu items do not serve detrimental purposes. If so many people are telling you that you are “awesome” and “amazing” and “perfect” you would be forgiven by most for believing that all is indeed perfect. But in my experience that is rarely the case, especially if your restaurant opened for full service the very week those accolades came streaming in. Too often I have wanted to believe that so many people cannot be wrong, only to take a seat at the “restaurant cooking the best food in Houston right now” and be, at best, disappointed with the food or service or, lamentably, both. (And I firmly state that both are necessary for a restaurant to be lauded as “awesome”.)

Take, for example, my experience this week. Ms. V – with whom I dine often, and whose palate I trust – invited me to Museum Park Cafe for dinner. The week before, she had dined there and liked the food. I accepted her kind offer and we drove to the Museum District about 7 o’clock, planning to enjoy some wine at the bar and check out the service.

I like the interior space. It is likely that the restaurant was designed to resemble a cafe or restaurant in a museum; in any event, it does. And the look works. Pale walls, art on one large wall, some wine bottles in modern racks toward the rear of the dining room, simple tables, no linens on them. Ms V and I ordered a Banshee Pinot Noir, and it was good. But the pouring of the wine is where the “awesomeness” began to suffer. The young man behind the bar, who told us he was the bartender, eager to take us off the hands of the waiter who escorted us to the bar and was doing a fine job, opened the bottle and hastily poured at least 6 ounces into Ms. V’s glass, evidently not wanting to let us approve of the wine. My dining companion firmly but politely told him “I want to taste it first.” He looked surprised, but allowed his guest to do just that. She liked the wine, as did I, and we continued discussing the Houston restaurant scene and mushroom hunting and the beauty of Alsace.

We were both a bit hungry, so Ms. V ordered (as written on the menu) Cheddar & Scallion Biscuits salumi caramel, a side dish that turned out to be, excepting the dessert, the best taste of the evening. The biscuits were warm, and light yet rich, the pork imparting a good touch of saltiness and the drizzled caramel providing a good mouthfeel and deep tone.

After we had our fill of the biscuits we decided to move to a table and order. We told the bartender that we would like to continue our meal in the dining room proper and he responded by saying “You’ll have to cash out first.” We responded by asking if it was possible for us to transfer the wine bill to our table, and politely requested that he ask the manager. He walked away and returned within 30 seconds, the check for the bottle in a tray, which he placed in front of us, all the while mute as a sleeping panda bear. Had he asked his manager? We never found out. Ms. V paid the bill and we proceeded to get down off of the high stools and make our way to a table. As our feet reached the floor bartender asked, nonchalantly, “Do you want me to take your bottle and glasses to your table?” I looked at Ms. V, on whose face was a fairly tight grimace. I knew what she was thinking, because I was thinking the same thing: What kind of service training did this bartender undergo? Who failed to teach him the basics? This was far from “awesome”. I picked up the two glasses and Ms. V handled the bottle and we took our seats.

Do not misunderstand me, for I mean no disrespect to the bartender. I am willing to understand and accept that he is more than likely a perfectly fine person. Yes, his attitude and behavior made our meal less than it could have been, but that did not make him a failure in our eyes. (I will also readily admit that Ms. V and I notice things in restaurants that many others seem not to. That does not make others unobservant, nor does it make us snobs. If one works in a good restaurant and does not notice things such as these one is not doing one’s job properly.)

We continued with our wine, and ordered more food. Let me state here that I am well aware that Museum Park Cafe is newly opened, and that kinks are surely being ironed out in the kitchen. I want this restaurant to succeed, because I can tell already that its approach and aesthetic are a welcome addition to the Houston restaurant world. My thoughts on our dishes are tempered by that newness. I will return, and I think the food will have improved by then.

Ms. V chose Steak Tartare french dressing, preserved egg, herb salad, gribiche for her first course, and I opted for the Roasted Bone Marrow shallot confit, oxtail marmalade, brioche. Then she decided to proceed with Swordfish, while I went for the Atlantic Scallops pork belly, corn pudding, charred onions, chanterelle.

Someone I know lauded the bone marrow at Museum Park Cafe, so I ordered it. Marrow is, as well, one of my favorite things; I have enjoyed great renditions of it at St. John in London and Le Pigeon in Portland. I was disappointed in this dish. The marrow was lacking that gelatinous look and reality that makes the food so good. The bread crumb topping was thin and bland, and not needed. Salt was also lacking, so I asked for some and sprinkled it liberally over the bones. It helped, but could not totally redeem things. On the other hand, the salad on the plate: onions, parsley, cilantro, dill. It was a great thing, the best element there. (I will not say much about the shallot confit. To my palate, it was best left off of the plate. No acid, mushy, almost as if it was meant to be food for babes.)

The tartare was very good. Whoever prepared it did so with great technique. Uniform pieces of meat, sauce mixed well, and the salad that accompanied the tartare was balanced and crisp. To the swordfish: I took a bite and immediately thought “sausage”. In fact, the dish reminded me of choucroute, which is not a bad thing at all. But if one wanted echt, proper swordfish, this dish was not for them. What seemed to be leeks in a sauce accompanied the steak. Something approaching a crust was seared on the steak, a crust that stated loudly: sausage.

My scallops were fine. The dish was plated in an attractive manner, the scallops were handled with care, and the corn pudding – if that is what it was – was tasty. I did not taste corn, and did not see corn. I wrote that the scallops were handled well, and by that I mean they were seasoned properly and not overcooked. However, they were cooked inconsistently; a portion of one had a good sear, while the remainder of the scallops were lacking the taste and feel that good searing imparts. And I would recommend no dill be put on the plate. Finally, the chanterelles, those glorious mushrooms, were soggy. I don’t know if they had been seared first, if they had been waterlogged when they were cleaned, but I thought it a shame to prepare chanterelles in that manner.

Dessert was all that remained. And it was good, and attractive. In fact, I say that it approached perfection. Textures, the right level of sweetness. All there. Semifreddo, a meringue, some pumpkin. It was something that no one would quibble with, and if it is on the menu when I return to Museum Park Cafe it will be ordered.

Now, about that bartender. I have it on record from a well-placed source that Museum Park Cafe is serious about service. I am confident that the young man’s approach to his job will be 180 degrees different on my next visit. Museum Park Cafe, I am certain, wants to take its service to a top level, and it should, and then, with a few tweaks, it could be “awesome.” Unfortunately, this was my first time at the restaurant, and as we all know, first impressions mean a lot. I was seated with my back to the kitchen, which gave me a view of the bar, behind which throughout our meal the bartender stood leaning against the counter, cupping something – peanuts? – in his closed hand and regularly lifting his head back to deposit the snack into his mouth. It was not a pretty picture, and he kept it up for a good 30 minutes. (One, never lean against things in sight of guests. There is always work to be done in a restaurant. And two, I think it best to refrain from snacking in such an obvious manner, as if one is a cow chewing its cud. Yes, I told you already, I have had high standards drilled into me where service and behavior is concerned.) The two waiters we dealt with were performing their duties as they should have. It seems the young bartender is the outlier here.

Museum Park Cafe should be on your list of places to visit. Sit at the bar and have some wine. Order the tartare and brioche toast. Admire the design of the place. And let me know what you thought of the service.

Update: I dined one more time at Museum Park Cafe before it closed (the restaurant became a thing of the past in April 2015). I ordered the bone marrow again, and this time a marrow spoon was required, as the bones were very narrow. Alas, the restaurant had none. I turned my fork sideways and pulled out a bit of the marrow, tasted it, and pushed the plate away. Same bland bread crumbs, dry marrow, hardly any flavor.

What I’m Drinking Now (And It Takes Me Back to Paris)

Every now and then I come across a wine that transports me, that at first taste takes me to a place I want to be. It happened a few evenings ago, and I have Vanessa Treviño-Boyd to thank for the brief excursion of the mind and spirit. I was sitting at the bar at 60 Degrees Mastercrafted, where Treviño-Boyd is the beverage director and sommelier, and she brought me a bottle of Lieu Dit, a 2013 Melon. The producer describes it this way:

From old vines planted in the early 70’s, this block grows on sandy soils in an exceptionally breezy part of Santa Maria Valley out at Bien Nacido vineyard. The fruit is pressed, fermented, and aged all in tank to ensure the minerality, freshness, and tension we look for when enjoying this variety.

It was crisp, balanced, and drinking it took me back to a little restaurant in the Fifth Arrondissement, at the top of Rue de la Montagne-Sainte-Geneviève, the street on which I lived. Several mornings each week a man would bring oysters he harvested to the restaurant, and I would go there and eat them as I stood on the sidewalk. If he was extremely busy, which he often was, I would shuck the oysters from Brittany at a small table outside the door of the restaurant, gathering a dozen or so on a plate before I ventured to begin my breakfast. With the briny wonders I drank, always, a wine that was from the Loire. I thought often of Hemingway, who had many times walked on that same sidewalk. Those mornings were beautiful. It was late fall, winter was coming on, and all was good with the world, at least on that small stretch of land in Paris.

I will be buying the Lieu Dit melon, a Brockhaus-approved wine, by the case, if I can find that much.

My Love For Riesling (and Olivia Newton-John) Knows No Bounds

Anyone who knows me well knows I am all about Riesling. I love the grape, I love the wines. I study them, I collect them, I drink them, I dream about them. I “grew up” in the Rheinland-Pfalz, a beautiful area out of which comes some great wines, and I still recall the first time I tasted a Riesling: It was 1980, and it was a Bassermann-Jordan, and it was delicious. My life changed then and there. I saw that magic could be bottled and opened later for one’s enjoyment. (Angela and I visited Weingut Geheimer Rat Dr. von Bassermann-Jordan in 2012, along with a number of other wineries in the area. And we’ll be back.)

The next day I went to the bookstore near my American high school and bought a copy of Frank J. Prial’s “Wine Talk” and began reading it immediately. I read anything about wine I could get my hands on, which was mostly in the International Herald Tribune (I was an editor on the staff of my school’s newspaper, and Ms. Thompson subscribed to the IHT for her journalism students).

Not long after that first taste my parents returned to the U.S. for a brief visit and I was left alone for a week or so. I don’t remember exactly where I bought my first collection of wines, but I clearly recall coming up with the plan to open a bottle each evening – I was at the time reading F. Scott Fitzgerald’s books in the order they were published, and the Rieslings surely added quality to that experience.

A friend who was around my age who lived upstairs from my family also liked wine, so he and I decided to start traveling to a village or town each week to enjoy a lunch or dinner and some wines. We went to Trier, and Mannheim, and many places in between. We ate bockwurst and schnitzel and escargot and saumagen. We drank mostly Rieslings, with some great beers thrown in for good measure. One meal I will always remember was one of trout caught from the waters below our table. It was at Seehaus Forelle, and it was more than 30 years ago, but it will be in my mind forever. The fish and the potatoes and the cucumber salad. And the wine. Riesling, of course.

That is how my passion for Riesling was born. But where, you ask, does Olivia Newton-John come in? Well, like any red-blooded male at that time I had a monumental crush on the Grease star. I loved the film, liked her songs, (though I was soon to discover the joys of Elvis Costello and U2 and the Police and BAP and leave her type of music behind), and admit to fantasizing about her from time to time. Or more often.

Yesterday I saw a video made by the Camerata crew, which transported me back to those days in Germany and made me think of Olivia and my first taste of Riesling. Watch this short, one of the best things I have ever seen made about my beloved grape, and perhaps you will understand what I am talking about. And whatever you do, drink more Riesling. It’s better than greased lightning.

 

Beauties from the Loire: The Wines of Saget la Perrière

I have spent some time in the Loire Valley, and love drinking wines from the large region. It is a place full of lively and interesting winemakers, not to mention châteaux, and if you’ve never had the pleasure of driving from Paris and visiting Chambord or Château d’Azay-le-Rideau and drinking wines from Olivier Cousin in a café around the corner from where they were bottled, you should consider booking a flight to France. It is a magical region, the Loire. (And if it was good enough for Leonardo da Vinci, it is certainly good enough for the rest of us.)

The Loire produces some of my favorite daily drinking wines, and yesterday I had the opportunity to meet Arnaud Saget, whose family owns Saget la Perrière and produces wine with 890 acres and six estates. A tasting lunch at The Oceanaire Seafood Room was the setting, and it’s been a long time since I enjoyed, at one seating, so many exemplary, easy-drinking wines that I would serve, without reservation, on a daily basis.

Saget is the director général of his family’s company and is charge of marketing, so he travels a lot; this weekend he will be in New York, and next week Germany. His enthusiasm for winemaking is infectious, and though he understands that wine (and the selling of it) is a business, it is evident that he also understands and respects that his calling is part of a long and hallowed tradition that brings joy to the lives of millions of people around the world.

We began with the Muscadet de Sèvre & Maine sur Lie Les Cilssages d’Or, and it was the ideal way to start a meal focused on seafood. I liked that this wine was not overly sweet, and the hints of peach and pear were refreshing.

We had more wines than food courses, but that was no problem. All of the selections were from 2012, and, as I wrote, are drinking well right now. My favorite was the Domaine de la Perrière Sancerre. Crisp, it made me think of a Riesling, and when Arnaud Saget told me that the grapes are grown in flinty soil I understood why I thought “Riesling”. This Sancerre would be perfect for an afternoon under a beach umbrella, or with oysters. Or both at the same time.

We tasted two reds at lunch, a Chinon and a Pinot Noir. The latter was unmistakably a pinot. Ruby color, faint, lovely vanilla taste, easy on the tongue. The Chinon, however, would be my preferred of the two reds, with its supple tannins and wonderful spiciness.

Yes, there was food. We were served an Alaska Red King Crab Salad as a first course, followed by Pan-Broiled Alaska Weathervane Scallops – overcooked to my palate – Seared Wild Alaska Halbut, and, as a closer before the dessert, Grilled Bering Sea Wild Coho Salmon, which we paired with the Pinot Noir, and which was the best dish of the day. Its tarragon butter sauce was perfect, creamy, slightly acidic.

If you are looking for wines to drink every day, bottles with great price points – the most expensive wine we tasted (the Le Domaine Saget Pouilly-Fumé) carries a suggested retail price of $29 – buying these Saget selections by the case would not disappoint.

Percebes, and We Were Late for Lunch at Asador Etxebarri

Food and cooking (and culinary subjects in general) constitute a large part of my reading diet. Magazines, food sections, web sites, books … all are fair game. In a recent issue of The New York Times I came across this piece, about something that was part of a meal that holds a place among my all-time favorite meals: percebes. 

Asador Etxebarri was the place, and we were on our way to San Sebastián, having left Barcelona that morning. Colby and Kim were in one car, and Angela and I in another. We were equipped with a GPS unit, so were not worried about making it to our lunch on time. That turned out to be misplaced confidence, because the name of the village in which Asador Etxebarri is similar to another village in the region, and the latter is the one our BMW’s GPS unit selected. We should have insisted on a Mercedes. (Editor’s note: A reliable source insisted that I include the following statement: “And I should have just paid attention to my driving and followed Kim, who was piloting the car ahead. In addition, I should have not argued with Angela when she expressed little faith in my sense of direction.”)

We arrived at the village early and waited on Colby and Kim – our favorite traveling companions – who were on their way to the “right” village. We ordered some wine and sat in the sun in an old square, watching schoolchildren play and dogs chase one another. Colby and Kim never arrived. We called them. They were at the restaurant. We were not. And we were going to be late.

What to do? Well, what we did was walk at a brisk pace to the car while Colby asked if it was possible for our lunch to be delayed, to allow us time to arrive. The manager assented. Kindly. I then attempted to program the village’s name into the GPS system, but it was not cooperating. We called Colby, told him of our dilemma, and he was informed that a young American was staging in Extebarri’s kitchen. The young cook came to the phone and gave directions to Angela, who then relayed them to me.

Traffic was heavy, lots of trucks – we were driving through a semi-industrial area. Hungry, expectant, we drove for about 40 minutes, ending up in a small and beautiful village. The village we thought we were in hours ago. We parked, walked a short distance to the restaurant, and, it turned out, nirvana.

Colby and Kim were happy to see us, Colby nursing a … was it a Campari? The dining room, upstairs, was sunny, spare, welcoming. The staff welcomed us, laughing a little.

We joined the punctual ones at our table and I was given the wine list; the waiter was aware of our mishap and intuited that I would want wine. A Txakoli is what I ordered. A bottle, which the four of us drank while we looked at the menu.

For those who know nothing of Asador Etxebarri, I have two words for you: Wood and Smoke. Victor Arguinzoniz is the man behind that pairing, and he uses them both to create  beauty. Take a look at the menu shown above and you will see that he grills everything, a method of cooking that imparts flavors of the different varieties of wood his staff collects from the area, including oak and vine cuttings. (He even created a special “cooker” in which he smokes caviar.)

Our meal began, and it was a highlight of our eating tour that trip, which included El Celler de Can Roca, Mugaritz, Akelare, and Arzak, among others. The percebes followed a smoked goat butter, a smoky and creamy opening course that I can taste even today, a few years later. Grilled peas, anchovies, egg followed. And one of the best pieces of beef that man ever cooked. (I asked for the bone, and we took it to the apartment we were renting in San Sebastián; I later trimmed it of all remaining meat and fat and used it in a ragù.) Colby, Kim, Angela and I spent three or four hours in Asador Etxebarri, and could have spent far more. After our lunch we took a short walk around the restaurant’s environs, admiring the green landscape, the quiet, and gained some insight about how geography and surroundings affect the way one cooks. But we had an appointment in San Sebastián, so once again hit the road and headed to the coast. Much awaited us.

Eurocave Is Open …

 

After being in storage for more than a year, my "old school" Eurocave is up running (if only slightly stocked).

One day, in 2003 or so, I went to a dinner party on Roosevelt Island and the host and I were discussing wine when he paused and asked me to walk with him. We stopped in front of a closet, the door of which he opened. Within was a Eurocave, something I had wanted for a while but did not have the $3,000 (or more) that was required for its purchase. John told me that his wife and he were returning to England and that I could have his French beauty for $150. Well, the night immediately became more interesting. I right then and there shook his hand and agreed to take care of transporting it to my apartment.

Since then, the unit has moved with me to several apartments in Brooklyn, to Dubai, and now to Houston, where this past week I unpacked it from its snug cardboard cocoon – it was shipped from Dubai to Florida in 2012 – and plugged it in. Its solid compressor hummed into life, and the bottles I had on hand are resting at a comfortable temperature.

This Eurocave is old – just how old I am not certain. It does not have a tempered glass door or a digital temperature and humidity indicator. What it does have is quality components, and history. Personal history. I buy a lot of wine, and friends often give me wine as a gift. I can recall many, many bottles that spent most of their lives inside my cave, and, by extension, the people who gave them to me. From France, from Germany, California, Italy, Spain. Right now, as it begins it life in Houston, it is taking care of, among a few other selections, a 2010 Bond Pluribus, a Malbec, and a great wine from Chinon, all birthday gifts I received this past weekend from good friends, thoughtful people who share the love of wine with me. I look forward to sharing glasses with them soon.

Roost Has Hooked Me

There’s a Notes list on my iPhone that grows larger daily. It’s a list of restaurants in Houston I plan to visit. Last night I crossed one off of the roster, a restaurant about which I have heard a lot, good things. It’s called Roost.

I have been looking for a restaurant here with “personality,” which in my book means, loosely, “not slick and shiny, not a place that looks as if it belongs in a hotel lobby or was designed with ‘wow’ in mind.” Too often, I have found lately, more attention is devoted to wall hangings and shiny displays than it is to the food. Roost, however, has the type of personality I want. Small space, a bar at which two people can sit, lots of wood, simple tables and chairs, eclectic decoration on the walls. It’s in a house on a fairly quiet street in a residential area of Houston, and my dinner there was one of the most enjoyable evenings I’ve spent dining in this city thus far.

I arrived a little after 6 and waited for Angela at the bar, which overlooks a small room that has a pass-through to the kitchen. A Sixpoint (in a can, a tallboy) was my order, and I sat and drank and watched the activity as diners began walking in. Roost does not take reservations for parties of fewer than six, but outside the restaurant picnic benches provide perfect seats in which to wait for your table. The chef and owner, Kevin Naderi, was out out at those tables lighting the heat lamps.

Angela arrived, and we took our seat at a table along the back wall that gave us a perfect view of the dining room, which by that time was filling quickly, mostly parties of four, with a few couples mixed in. The menu at Roost has just been changed, and I was impressed: highlights to my eye were hanger steak, mussels in a red curry, an oyster stack, an off-menu special of redfish. And the “famous” cauliflower.

We ordered the cauliflower, the oyster stack, an order of the mussels, and the hanger steak, with a bottle of Hahn pinot noir. In short, every dish was very good, especially the fried cauliflower, with its sauce and pignoli and onions. (It is usually served with bonito flakes, but we asked from them on the side, though I later nestled them on top of each floret.)

The fried oysters were breaded perfectly, and the sautéed spinach under them was a great touch. The mussels were cooked well, full of flavor, which the curry (tomato-based) complemented ideally. Hanger steak medium rare with kimchi rice (a half order) and a runny egg came to the table with aplomb: nice temperature, fine flavor, though it could have used a bit of salt at the end.

Finally, the beignet-like round donuts and coffee ice cream finished our meal. (And a note about the service: Some of the best I have encountered in Houston. Not obsequious, informed, calm, and each plate came out with perfect timing. We were able to enjoy the meal in a relaxed manner. Someone has conducted great training at Roost.)

An Impromptu and Perfect Lunch

Last week I made a spur of the moment decision to dine at RDG+Bar Annie, Robert Del Grande’s elegant restaurant in the Galleria section of Houston. I ordered the Restaurant Weeks menu, and for $20 was treated to three courses … All very good, one excellent. I started with a chilled corn soup – the excellent course – and proceeded to a nearly perfect hanger steak and frites, closing with a chocolate brioche bread pudding. The soup was creamy, fresh roasted corn, touch of spiciness imparted by a dollop of smoked chile, garnished with cotija. I drank a 2011 Jean-Louis Chave Côtes du Rhône ‘Mon Couer’ and am now ordering a case of this beautiful wine.

A lovely touch I encountered in the restaurant … Actually, two lovely touches: a framed handwritten letter from Julia Child to Chef Robert Del Grande hangs on the wall, and when the hostess (I later found it that it was Mimi Del Grande I was talking to) saw the book I was reading, a volume of Johnny Apple‘s NY Times dispatches, she told me that he and his wife, Betsey, were frequent guests . She added that his business card was still in her wallet, and produced it for me. I like how food and passion connects us.

I’m in Houston, and I’m eating a lot, immersing myself into this sprawling city’s culinary offerings. Angela and I have dined at several places recently, and I have been solo at some others. With one exception – Triniti – the food has been good, some of it very good, including an excellent snapper at Reef and some wonderful Thai (including a soft shell crab) in the waterside town of Seabrook, south of Houston toward Galveston. Angela especially loved her scallop and shrimp curry there, and the evening ended up at the bar with two of the town’s finest, one of who gave us his recommendations, which included a sushi place in Houston.

Yesterday for lunch I had tacos at Tacos A Go-Go … pork and chicken guisado (stewed). Perfect bites, long, slow cooking, corn tortillas. All for $4.00. Last night Chris Stanton, a friend and former colleague of mine from the Abu Dhabi and Dubai days, and I shared a table at Provisions, and the meal began with Bone Marrow Brioche/Tomato Jam/sheep’s cheese, followed by Ham O’ Day (a prosciutto from America’s Midwest).

I would have liked more marrow and marrow taste in the bread pairing, an opinion that Chris shared, and the tomato jam was a tad too sweet, but the cheese was excellent – a bit crumbly, soft mouth feel, slightly creamy yet pungent. The ham, which came atop a light mustard sauce, imparted a salty taste at the back of the palate, which at first Chris and I did not like. But then a funkiness set in, and that made us hunger for more. We agreed that the curing was carried out well, and we were happy.

We were drinking a 2008 Bodegas Aster Crianza, and the ham’s funkiness enhanced its taste. At $32 a bottle it is one of the least expensive wines on Provisions’ list, and is a good value.

To the lamb. And to Korea, because that’s the first thing my brain thought of when I put one of the ribs in my mouth. They were crisp on the outside, and fairly tender meat was underneath. Unfortunately they were overly sweet. We tasted plum and brown sugar, and I would swear that some molasses was in the mix. We wanted less sugar, richer meat. But that did not stop us from finishing the dish. (We turned our attention to the paté before we finished the ribs, and when we returned to them they had cooled off, which enhanced their taste. They were better close to cold.)

A first bite of the rabbit paté told us that, while excellent, it should never be ordered with the lamb ribs. Pea tendrils graced the top of the rabbit, and a bite of that dish, followed by a taste of the ribs, took us from the freshness of spring to a brisk and smoky autumn evening. Too jarring, too discordant. Both great plates, but if they eloped their romance would never last.

Chris and I shared an apartment in Abu Dhabi in 2008, and when I first met him I considered myself very fortunate, because he loves food, and he loves to cook. And he is a good cook, intuitive. We teamed up well in our kitchen, and produced some great plates together, including a salmon tartare cone (thank you, Thomas Keller) and, with the help of his parents, a wonderful Thanksgiving dinner for 14.

During our dinner at Provisions Chris asked me as we were eating the ham how much I knew about curing meat, and told me that a visit to the Staten Island home of a friend of his father’s marked the beginning of his passion for food. Chris was 8, and they made fresh pasta and sliced some homemade prosciutto and drank some wine made by a grandfather from Italy. Chris showed me a photo of the salumeria in that Staten Island home, and I share it with you. (Please notice the crucifix at the upper left of this photo. It is indeed blessed meat.)

I replied that I knew a lot about the process of aging and curing, but other than dry-aging a steak I have never had the opportunity nor time to do it. That is going to change, however, and Chris and I are making plans to create a salumeria of our own, so stay tuned.
